Avocado Salad

A simple and delicious salad featuring ripe avocados and fresh vegetables.
Ingredients
- 2 ripe avocados, peeled, pitted, and diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine diced avocados, cherry tomatoes, chopped red onion, and cilantro.
- In a small bowl, whisk together fresh lime juice and olive oil to make the dressing.
- Pour the dressing over the salad and gently toss to coat all the ingredients.
- Season the salad with salt and pepper to taste.
- Chill in the refrigerator for about 30 minutes before serving to allow the flavors to meld.
